Tiramisu French Toast

Tiramisu French Toast

Ingredients

1 thick slice of white bread

2 eggs

100ml milk

THE COFFEE MIX

2 shots coffee

Splash water

1 tbsp maple syrup

TO TOP

200g thick Greek yoghurt

1-3 tbsp maple syrup (to taste)

Cocoa powder

THE OATBRAN CRUMB 

2 tbsp almond butter

2 heaped tbsp of Mornflake Original Heart Healthy Oatbran 

1 tsp cocoa powder

1 tsp sugar or sweetener

Pinch of salt

Method

  • First, preheat your oven to 180°C.
  • Then, make your oat bran crumb – to a bowl, add your almond butter, cocoa powder, sugar, salt & Mornflake Original Heart Healthy Oatbran, mixing well with the back of a spoon until you have a crumbly consistency. If needed, add 1-2 tbsp of milk to get this to come together as a crumble.
  • Add this mixture to a small baking tray, spreading out evenly, then bake in intervals of 6 minutes for about 18 minutes, or until golden brown and slightly crispy, stirring each time the timer goes off.
  • Next, prep your yoghurt for the top. Mix your thick yoghurt and syrup or sweetener of choice to taste, adding a drop of vanilla if you have it.
  • Once you’re happy with the taste, set aside, or add to a piping bag (depending on how you want to serve it).
  • Brew 2 shots of coffee, then add a splash of water and your maple syrup and set aside.
  • Crack your eggs into a flat bowl, or plate with lips, then add your milk and whisk together.
  • Soak your bread in the mixture on either side for around 30 seconds, then get a pan ready to cook it.
  • Grease a pan with butter or oil, leaving on medium heat, then add your French toast and fry on either side until golden, then remove from the heat.
  • Plate up your French toast, poking the surface with a fork all over, then drizzle over some of your coffee mixture with a spoon, so it soaks into the bread.
  • Top the toast with your yoghurt – either pipe it on like we have, or spread it over.
  • Add a dusting of cocoa powder and a sprinkle of your oatbran crumb, then serve with more maple syrup.
