Make a quick sugar free jam with strawberries, chia seeds and vanilla before using it to top these creamy bircher oats.

For the bircher
80g Gluten free Mornflake oats
200ml milk or plant based milk
1/2 tsp vanilla extract
100g fresh strawberries, roughly diced
For the chia jam
150g strawberries
2 tsp chia seeds
1/2 tsp vanilla extract
To make the chia jam:
Slice the strawberries and remove stalks. Mash well then add the chia seeds and vanilla extract before stirring together. Cover and leave in the fridge to thicken.
To make the bircher:
The night before; mix the oats, milk, vanilla extract together in a bowl. Divide equally into two bowls.
Slice strawberries and add to one of the oat mix bowls and stir. Cover both bowls and place in the fridge over night.
In the morning, remove the bowls from the fridge.
Stir the chia jam and spoon into the base of the jar/glass. Add the strawberry oat bircher and top with the vanilla oat bircher. Finish with a spoonful of chia jam and sliced strawberries. Alternatively spoon the strawberry oats into a bowl with the vanilla oats and add chia jam and strawberries.
