Oats are good for so much more than just a fantastic breakfast. Take this Spring Pea Oatmeal for example.
We’ve combined a hearty helping of two types of oats with the wonderfully fresh taste of peas and mint to create a meal that’s perfect for lunch or dinner this Spring.
75g Mornflake Gluten-Free Jumbo Oats
75g Mornflake Gluten-Free Superfast Oats
720ml vegetable stock
75g fresh peas
1 medium courgette, grated
2 tbsp nutritional yeast
1 tbsp lemon zest
1 tsp garlic powder
½ tsp onion powder
10-12 mint leaves
Salt and pepper, to taste
To Serve
3 heaped tbsp of dairy-free creme fraiche
Sprinkle of hazelnuts
Fresh mint
Put the oats into a small pan with the vegetable stock. Bring to the boil, add in the remaining ingredients, then simmer for 5 – 10 minutes until the oats are soft.
Serve warm with a dollop of dairy free creme fraiche, chopped hazelnuts and fresh mint.
