Ingredients

THE PIE CRUST

2 tbsp almond butter

2 tbsp plain flour

1 tbsp oat flour (Mornflake Superfast Oats blitzed)

1/2 tsp brown sugar

Tiny sprinkle of bicarbonate of soda

1-2 tbsp water

THE QUICK MINCEMEAT 

4 tbsp raisins/sultanas, soaked in water

2 tbsp marmalade with bits

Method

  • First, soak your raisins in hot water for around 10 minutes whilst you prep your pie crust.
  • Preheat your oven to 170°C.
  • Add your almond butter, flour, bicarbonate of soda and oat flour to a mixing bowl, mixing with your fingers until you have breadcrumbs.
  • Add your sugar and 1 tbsp of water, mixing to combine again.
  • Press 1/2 of your dough around the edge of your single serve ovenproof bowl/ serving dish, then prep your filling.
  • Add your raisins and marmalade to a microwave safe bowl and microwave for around 1 minute, until the marmalade has melted, and you have a mincemeat-like texture.
  • Add your ‘mincemeat’ to the centre of your bowl, then roll out the remaining pastry mixture and cut out a star shape.
  • Place the star on top of your mincemeat mixture, then bake for 15-20 minutes, until your ‘pastry’ has started to brown.
  • Remove from the oven, set aside to cool for a minute or two, then serve with a dusting of icing sugar.
