Ingredients

THE PASTA

1 egg

75g plain flour

25g Mornflake Superfast Oats blended

THE PEA PESTO

30g basil

40g cup peas

2 tbsp roasted pine nuts

Chunk of parmesan

8 tbsp olive oil

Splash of water

Lemon juice

Salt and pepper

Method

Crack your egg into a mixing bowl, then add your flours, mixing well to form a ball of dough – if it won’t come together in a dough, add a splash of water.
Roll out onto a work surface and continue to knead with your hands for a few minutes – your dough will be quite firm.
When it’s a smooth dough, set aside.
Now, make your pesto – add everything to a blender and blend until smooth. Season to taste.
When you’re ready to serve, boil a pan of water on the hob, adding a good amount of salt to boil your pasta.
Use scissors to chop small pieces off your dough, carefully dropping them directly into the water – pasta shapes should form when you do this. If the water splashes back, cut the pasta onto a plate and drop it into the pasta all at once.
Whilst your pasta cooks, reserve some of your pasta water in a small bowl.
Once your pasta is cooked as you like, drain it and set aside.
To a frying pan, add a splash of your pasta water, followed by half of your pesto – allow this to simmer on medium heat & once it starts to bubble, add your pasta to the pan and toss around until coated in the pesto.
Plate up your pasta in a serving bowl, topping with parmesan, peas, olive oil and pine nuts.
