Ingredients

300g leftover porridge

300g wholemeal flour

1 egg

1 tsp bicarbonate of soda

Milk

Oil to fry

Method

  • Add your leftover porridge, flour and bicarbonate of soda to a mixing bowl, mixing well. Then crack in an egg and continue to mix until fully incorporated.
  • Add a splash of milk at a time, mixing until you have a batter with the consistency of double cream.
  • Add a pan to the hob, leaving on medium-low heat, greasing it with oil or butter.
  • Once the pan is warm, add a large spoonful of batter to the pan, leaving to cook until bubbles are forming on the top – flip at this point & leave to cook for another minute.
  • Repeat with the remaining batter, then serve up with yoghurt & your favourite fruit.
