Cookie Dough Croissants

Ingredients

THE COOKIE DOUGH 

35g granulated sugar

2 tbsp Mornflake Original Heart Healthy Oatbran

55g brown sugar

Pinch of salt

40g unsalted butter, melted

1/3 of an egg or 15g egg whites

1/2 tsp vanilla

50g plain white flour

1/4 tsp bicarbonate of soda

60g chocolate chunks

Method

  • First, make your cookie dough – in a bowl, mix together the melted butter, sugars and your pinch of salt until you end up with a smooth paste.
  • Add your vanilla and egg and mix until you have a silky mixture.
  • Fold through the flour, Mornflake Original Heart Healthy Oatbran and bicarbonate of soda with a spatula, until you have a cookie dough, then add your chocolate chips and stir through again. Don’t overmix.
  • Chill the cookie dough in the fridge for 30 minutes.
  • When you’re ready to bake, preheat the oven to 180°C.
  • Cut your croissants in half, then spread 2 tbsp of cookie dough inside the centre of each, then close them and spread the remaining cookie dough on the top.
  • Bake for 15 minutes – bake for a few minutes more if the cookie dough has not turned golden and crisped up.
  • Leave them to rest for a few minutes before serving.
