If there’s a better way to start a day than with carrot cake, we’re yet to find it.
Our Carrot Cake Smoothie takes all the yumminess of the humble carrot cake, and with a couple of healthy twists, makes it a little more suitable for first thing in the morning.
1 large / 2 small carrots
2 bananas, frozen
4 tbsp Mornflake Jumbo Oats
6 walnuts
1-2 medjool dates
360ml almond milk
1 tsp vanilla extract
¼ tsp cinnamon
¼ tsp mixed spice
Toppings
2 heaped tbsp coconut yoghurt
A few chopped walnuts
Put all of the ingredients into a blender and blend until smooth.
Pour the smoothie into two glasses and top with coconut yoghurt and walnuts.
