Banana loaf is always a delicious and easy bake, this loaf has the addition of fruity blueberries and fresh lemons. Made with oats and ground almonds for a wheat free bake.
500g bananas (weighed in the skin)
180g Mornflake Stoneground Oatmeal Fine
125g coconut oil
120g rice malt syrup
100g ground almonds
200g fresh blueberries
Juice of 1 lemon
2 large eggs
1 tsp. of baking powder
1 tsp. bicarbonate of soda
1 whole banana for the top of the cake
