For the pancakes, mix all of your dry ingredients in a mixing bowl, then make a well in the centre, mixing in your wet ingredients and sprinkles until combined.
Heat 1 tsp of butter in a pan on medium heat, then add a ladle of your pancake batter to the pan, allowing it to cook until bubbles start to form on the top. Flip your pancake, cooking for another 30 seconds, then repeat with the rest of the batter.
Stack a few pancakes on a plate and top with whipped cream, sprinkles and maple syrup.
