2 bananas

1 egg

1 big tbsp Greek yoghurt

4 tbsp self-raising flour

2 tbsp oat flour (Mornflake Superfast Oats blended)

1/2 tsp vanilla extract

Method

  • Mash your bananas into a bowl, then add your egg & yoghurt.
  • Add your flours, baking powder, chocolate chips & vanilla extract, mixing until you have a smooth batter.
  • Melt some butter in a frying pan on medium-low heat, then add 1 large tbsp of pancake batter to the pan, spreading around to make a bigger pancake.
  • Allow to cook until the pancake begins to turn matte on the top, and bubbles start to form.
  • Flip your pancake, allowing it to cook on the underside for around 30 seconds, then set the pancake aside and repeat with the rest of the batter.
  • Stack the pancakes up, topping with whatever you like – we did yoghurt, chocolate chips, caramelised banana and maple syrup.
