Honey Roasted Sprouts with Garlic Crumbs

Oats bring a hearty texture and nutty undertones to the table, perfectly complementing the sweetness of honey-roasted sprouts. The garlic-infused Oatmeal crumbs add that extra kick, turning a simple side dish into a culinary masterpiece.

Ingredients

THE SPROUTS 

1 packet of brussel sprouts (around 30 sprouts), bases cut off, then cut in half

1 tbsp honey

2 tbsp olive oil

Pinch Maldon salt

Pepper

 

THE GARLIC CRUMB

2 tbsp olive oil

1 large clove garlic

Rind of 1/4 lemon, finely grated

Pinch of salt

Pinch of chilli flakes

Freshly ground black pepper

120g Mornflake Medium Oatmeal

Pecorino or parmesan, finely grated

Method

  • Preheat your oven to 190°C.
  • Chop the bases off your sprouts, peeling off a few of the outside leaves, then cut each in half from the top to the base.
  • Do this with all of your sprouts, then add them to a bowl to mix with your seasonings.
  • Add all of the sprout ingredients to the bowl, mixing them well so they’re completely coated in the oil and honey mixture.
  • Add your sprouts to a baking tray, spreading around evenly, then bake for 20 minutes, or until you like them – at this point they will have caramelised slightly, and have softened up.
  • Whilst your sprouts are in the oven, make your garlic crumb.
  • Add your olive oil to a frying pan on medium heat, then finely slice a clove of garlic, adding it to the oil once hot.
  • Once the garlic has browned, add your Mornflake Medium Oatmeal to the pan with a sprinkle of salt, stirring occasionally for a minute or two until the oatmeal starts to crisp up.
  • Once your Oatmeal has crisped up nicely, remove from the heat allowing to cool, then add the rest of the seasonings, apart from the parmesan (you’ll add this at the end).
  • Once your sprouts are cooked, add to your serving bowl, then sprinkle over your garlic crumbs and some grated parmesan.
