Jack-o’-lantern peppers stuffed with delicious oats – they are scarily good!
Preheat the oven to 170°C.
Slice the top off all of your peppers, deseeding them, without ripping the outsides.
Using a small knife, (carefully) carve out jack-o-lantern faces – take out two triangle eyes first, then the same with the mouth (or you can do whatever design you like).
Repeat with all the peppers, then rub each one with olive oil on the outside.
Fill each pepper with 1/2 an Oat Made pot – you can mix up which flavour goes into which pepper.
Flatten out, then top each pepper with the lid that you cut off earlier.
Place all of the peppers on a baking tray, baking for 15-20 minutes, until they have begun to blister and turn slightly golden.
Serve with halloumi, fish, or meat of choice, and save the rest for quick lunches or dinners throughout the week.
