Breakfast Apple Crumble

This recipe is the perfect way to start your day on a sweet note. Whether you’re a breakfast enthusiast or simply someone who enjoys a cosy morning treat, the Breakfast Apple Crumble will surely become a staple in your kitchen.

Ingredients

The crumble 

2 tbsp peanut butter

Optional: 1 tbsp sugar

1 tbsp honey

2 tbsp milk

6 tbsp of Mornflake Fine Oatmeal

Tiny sprinkle of baking powder

The apple 

2 large apples, peeled and cubed

1 tbsp sugar

1 tbsp lemon juice

Method

  • Peel your apples, then core and dice them into 2cm chunks.
  • Add them to a saucepan, with 1 tbsp sugar and 1 tbsp of lemon juice, leaving on medium-low heat, covered with a lid, for around 10 minutes – keep checking on them to make sure they’ve not caught to the bottom of the pan, and if they start to catch, add a drop of water and reduce the heat slightly.
  • Whilst your apples are cooking, preheat your oven to 170°C.
  • Add your peanut butter and honey to a bowl, followed by your Mornflake Fine Oatmeal and a tiny pinch of baking powder.
  • Mix these together using the back of a spoon, then begin to combine with your hands so you have breadcrumbs.
  • Add 1 tbsp of milk at a time, continuing to pinch and mix the crumble with your hands – you want it to be crumbly, with some clumps sticking together.
  • Once your apples are cooked, mash them up slightly, but not fully, using the back of a fork, or a potato masher, then spoon between 2 dishes, or in one big dish.
  • Top with a healthy handful of crumble per dish, or sprinkle all the crumble over a big dish, then bake for 20-25 minutes, or until your crumble has started to crisp up and turn golden brown.
  • Remove from the oven and leave to rest for at least 5 minutes before serving, then serve with yoghurt or toppings of choice.
