When chia seeds are mixed with coconut milk and left overnight they form a wonderfully thick chia pudding. Layer with a pineapple and spinach smoothie and toasted coconut chips for a tropical start to the day.
For the chia pudding layer
130ml coconut milk
2 tbsp chia seeds
For the smoothie layer
A large handful of spinach
A handful of Mornflake Creamy Superfast Oats
A large handful of pineapple, fresh or frozen
¼ cup coconut chips
¼ cup toasted coconut milk
Toppings
Toasted coconut chips
Chopped almonds
Buckwheat groats
Fresh pineapple
The night before, add the chia seeds to a bowl, pour over the coconut milk and stir thoroughly together. Cover and leave overnight in the fridge until the mixture has thickened.
In the morning add all the smoothie ingredients to your blender and blend until creamy.
Add the chia pudding to a glass, pour over the smoothie then top with coconut chips, chopped almonds, a sprinkle of buckwheat groats and fresh pieces of pineapple.
