Ingredients

THE ROUX

50g butter

1 heaped tbsp oat flour (Mornflake Superfast Oats blitzed)

2 heaped tbsp wholemeal flour

1 tsp Dijon mustard

1 big handful grated cheddar

Around 300ml milk (depends on flour, heat and cooking time, so add more or less if needed)

THE GREENS 

2 tbsp olive oil

1 onion, finely diced

1/2 head broccoli, finely chopped

200g spinach

6 lasagne sheets

1/2 block parmesan, grated

Black pepper

Method

  • First, cook your greens – finely dice your onion, adding to a pan with olive oil and salt on medium heat. Cook these for 5-10 minutes until they start to brown nicely. Prep your broccoli in the meantime, finely chopping.
  • Add your broccoli to the pan, allowing it to fry for a few minutes, then add your spinach with a splash of water and cover the pan with a lid until the spinach has wilted.
  • Fry your greens for another minute or two, adding seasoning to taste, then remove from the heat.
  • For the roux sauce, add your butter to a medium saucepan on medium heat, allowing it to melt, then add your flours, whisking to form a paste.
  • Add your milk, little by little, whisking between each addition until you end up with a smooth roux sauce – keep adding milk until your sauce is just thicker than double cream.
  • Stir through your grated cheese and mustard, seasoning the sauce to taste.
  • Preheat your oven to 180°C for the lasagne to bake.
  • To build your lasagne, add a few tbsp of roux sauce to the bottom of your tray, topping with a few tbsp of your vegetable mixture.
  • Lay 2 tbsp of lasagne sheets over the top, then repeat with the remaining mixture, adding cheese in between the layers if you’d like.
  • Once you’ve laid down your final lasagne sheets, top with roux sauce and a good few handfuls of grated parmesan.
  • Add some black pepper to the top, then bake for 20-25 minutes until the cheese is bubbling and brown on the top.
  • Cut into four and serve.
