Ingredients

THE BAKED OATS

1 banana

90g Mornflake Superfast Oats 

30g vanilla whey protein powder

1 egg

Splash of milk

Pinch of salt

 

TO TOP 

4 tbsp Greek yoghurt + liquid sweetener of choice

Optional: vanilla extract

2 shots of espresso + 50ml water

Cocoa powder

Method

  • Mash your banana into a mixing bowl, then mix your egg with the protein powder and Mornflake Superfast Oats.
  • Add a splash of milk to bring the mixture together, then add the mixture to a microwave-safe dish – microwave for around three minutes on medium power, or until the top is completely matte and fully cooked.
  • Remove from the microwave and set aside to cool.
  • For the toppings, brew 2 shots of espresso, then add 50ml of water, and maple syrup if you want some extra sweetness.
  • Mix your cream – add your yoghurt & syrup sweetener to a bowl, with a splash of vanilla extract until you’re happy with the sweetness of the cream.
  • Pinprick the top of your microwaved oats, then pour over your coffee mixture evenly, allowing it to sink in.
  • Top with your yoghurt cream, then dust with cocoa powder when you’re ready to serve.
  • Slice in half and plate up.
