This bowl of festive porridge is here to prove mince pies aren’t just for Christmas, they’re for breakfast too! Combine apples, pecans, cranberries, sultanas, orange zest and festive spices to add all the flavours of mince pies to your morning bowl.
80g Mornflake Organic Superfast Oats
300ml cashew milk
½ tsp ground cinnamon
½ tsp ground mixed spice
¼ tsp ground nutmeg
¼ tsp almond extract
Zest of ¼ orange
30g dried cranberries
30g sultanas
1 medium apple, grated
2 tbsp grade A maple syrup
2 tbsp water
Toppings
Pecans, chopped
Cranberries
Sprinkle of orange zest
Slice of orange
1-2 squares dark chocolate, roughly chopped
Add the grated apple, maple syrup, spices and water to a small saucepan and cook over a low heat for 10 minutes, stirring occasionally.
Meanwhile in another saucepan add the oats, almond extract, cranberries, sultanas and cashew milk. Gently heat the porridge and cook for about 10 minutes, stirring regularly, until soft and creamy.
Transfer the cooked apples into the porridge and stir together.
Spoon the finished porridge oats into a bowl and top with chopped pecans, cranberries, sliced orange, orange zest and chopped chocolate.
